SYRIA. Candied Pumpkin
Candied pumpkin is an ancient tradition throughout Middle eastern countries, utilising a cheap ingredient and creating the most delicious candied treat.
Archeologists have found evidence that pumpkins were cultivated in present-day Mexico around 10,000 years ago, and were only introduced to Europe after Colombus’s discovery of America, during the second half of the 16th century, and from there it spread to North Africa and the Middle East.
This local man was working with this really old machine, which sliced through this enormous pumpkin, where he then used these fluted cutters, to individually stamp through the raw pumpkin.
The pumpkin pieces were then boiled in a syrup, before sealing in a jar to preserve. In true Syrian style, we were offered a piece to sample, which really had no resemblance of pumpkin flavour, rather a very sweet, jellied like candy.
