SYRIA. Bakdash Ice Cream
Bakdash ice cream parlour is situated in the Grand Hamidiyeh Souk in old Damascus and famous for their signature mastic-infused Arabic gelato. We visited this landmark ice cream shop in the ancient city of Damascus.
Established in 1895, this Arabic-style ice cream is infused with Sahlab, a flour made from orchid roots and pounded by hand with metre-long mallets until it takes on a soft, stretchy texture. The flavour is less sweet than regular ice cream, which we love, and it’s lighter in fat content, elastic, stringy, and gooey, and is served, rolled in freshly chopped, locally sourced pistachios and a generous heap serving costs just $1 per bowl.
When the civil war broke out in Syria in 2011, millions of people fled the country and before long, Bakdash parlours have popped up all over the world, including here in Sydney.
