SYRIA. Gateau Bharat.

Our journey continues through Syria, where we stumbled across this traditional little cake called Gateau Bharat. It’s a dense sponge cake on the bottom layer, with a spiced meringue piped top.

And Syrians instinctively know that there is only one way to eat it. You have to twist the bottom part of the sponge cake until it comes off, and then you smoosh that part of the cake on the top of the dome. If you’ve done it right, you should be eating it like a sandwich.

We also discovered a very elegant patisserie, offering some of the most incredible Syrian pastries, that truly reflect this ancient culture. It has influences from Turkey, Lebanon, and Egypt, with the finest of filo pastry, the brightest pistachio crumb and the sweetest rose water syrup.
