Makdous are a culinary heritage that is served at the Middle Eastern mezze, especially in Lebanon, Syria, and Jordan.
This integral part of the Levantine breakfast table is baby eggplants blanched in salted water and stuffed with a flavorful mix of herbs, garlic cloves, and coarsely chopped walnuts.
OMG we loved these marinated pickled and stuffed eggplants in olive oil so much, we bought a jar to bring back home (in 2010 we had never seen them in Sydney, but now you buy everywhere). Well the whole huge jar leaked marinated oil through my suitcase and a big lesson was learnt! Always pack many waterproof bags when travelling 😂
