Fig and Macadamia Nut Bars

We never go anywhere without food. We need to know there is food close by. And these Fig and Macadamia Nut Bars are the perfect travel companion.
These babies are refined sugar free and full of goodness like chia seeds, almonds, pepita and sunflower seeds, linseed powder, some homemade chai powder and dried figs and honey to bring it altogether.
Fig and Macadamia Nut Bars
1 cup macadamia nuts
1 cup almonds
1 cup pepita seeds
1/2 cup sesame seeds
1/2 chia seeds
1 cup sunflower seeds
1/2 cup shredded coconut
1 cup dried figs
1 tablespoon chai spices
1 cup honey
1 teaspoon vanilla extract
Preheat the oven to 150°C, and line a baking pan with baking paper. In a food processor bowl, combine the seeds, nuts, figs, coconut and spices.
Pulse food processor on and off, until mixture is combined and still chunky in texture. Add honey and vanilla and pulse a further few seconds until combined.
Pour in to the prepared baking pan, then using damp hands, press down well. Bake in the oven for around 40 minutes, it should be lovely and golden on top.
Remove from the oven and leave to cool completely. This is important, as the bars will crumble if you try to cut them before. Holding the edges of the baking paper, gently lift out the bars and place on to a cutting board. Using a large knife, cut the granola in to thick bars.
Makes 24 bars. Keeps for up to two weeks in an airtight container.
Note: Chai spices is a combination of cinnamon, nutmeg, star anise, cardamon, cloves blended together.
