Homemade Mayonnaise
Recipe of an awesome Homemade Mayonnaise
4 egg yolks
2 teaspoons verjuice, white wine vinegar or lemon juice
2 teaspoons Dijon mustard
200ml olive oil
Salt & freshly ground white pepper
Place the yolks, verjuice or vinegar, mustard, salt and white pepper in a food processor and process until all the ingredients are light and creamy.
While the motor is running, gradually pour in the oil in a thin stream, until the mayonnaise is thick and pale.
Place in a sterile glass jar and seal. Keep refrigerated. As there are no preservatives in the mayonnaise, only place clean utensils into the mayo.
